Scrambled eggs very soft
To get creamy scrambled eggs and delicate, after being beaten with salt and pepper, add milk or cream, it takes about a tablespoon for each egg. Mix thoroughly and quickly pour into a bowl of steel, to be laid on a boiling water bath. So cook on low heat, without stirring with a whisk: eggs will be ready in 7-8 minutes, soft and smooth.
For faster operation you can use a frying pan, often provided at the bottom and low heat, otherwise the eggs will coagulate too rapidly resulting gummy.
