Ingredients for 6 persons:
For the dough:
- 150 grams of flour
- 60 g of butter
- 40 grams of sugar
- ½ packet of baking powder for cakes
- 1 egg
- grated rind of ½ lemon
- a pinch of salt
For the filling:
- 1 kg of red or golden apples
- 3 egg yolks
- 80 grams of sugar
- ¼ of milk
- 20 g flour
- ½ packet of vanillin
- zest of ½ lemon
- 1 tablespoon powdered sugar
- For the cake:
- 20 g butter
- 20 g flour
Preparazione:
Sift the flour with the baking powder, a fountain, put the butter, softened to room temperature and divided into pieces, sugar, egg, a pinch of salt, the grated rind of one lemon, and mix ingredients rapidly , wrap the dough into a sheet of plastic wrap and let rest in refrigerator for 30 minutes.
Meanwhile, pour the milk into a saucepan, add the lemon peel and bring to a boil; worked in a bowl the egg yolks with the sugar, add the flour sifted with the vanilla and pour flush the hot milk through a strainer, stirring with a wooden spoon, transfer the mixture into a saucepan, place it on the stove, bring to a boil, stir continuously, cover the pan and cook the cream for 7-8 minutes. at which point remove from heat and let cool.
Peel the apples, cored and privatele seeds and cut into wedges.
Roll out the dough into a thickness of about 2-3 mm, line the buttered and floured, prick the bottom with the tines of a fork, pour the prepared cream, spreading it in an even layer; cream laid on the apple into wedges and sprinkle with icing sugar.
Bake the cake in a preheated oven at 180 degrees for 50 minutes, so that the resulting apples caramelized slightly. Can be served hot or warm water, after having sprinkled with icing sugar remained.
