Drying the mushrooms:
To get the wonderful dried mushrooms you have to remove the earthy part of the stems with a boxcutter and then scrape it gently, then with the help of a brush, remove all excess soil, hats, wipe with a cloth moistened. Then cut them into slices of 2-3 cm regular, arrange them on a wire rack and leave to dry in the sun for 2 days turning every 6 hours and making sure to remove them at night so as not to get moisture.
A quick way is to arrange the slices on a baking tray and bake for 2 hours at 50 degrees with the door ajar.
Keep them up 5-6 months in glass jars.
