- 400 g of wet salted cod
- 250 g of potatoes
- 1 bunch of basil
- extra virgin olive oil
- salt
Preparazione:
Wash the basil, dry gently and frullatelo in a blender with a pinch of salt and extra virgin olive oil until you get a cream, peel the potatoes, wash them, cut them into cubes and fry in a pan with a drizzle of extra virgin olive oil : divide the cod in slices and fry in very hot pan with a drizzle of extra virgin olive oil at this point, dial plate: a trancetto cod, then potatoes into cubes, a dash of basil cream and another slice to close. You can decorate with a potato goffredo.
