Soft and juicy roast
Before going into the oven browning a roast is crucial in a pan, over high heat with a drizzle of extra virgin olive oil as this will seal the meat and the juices stay inside and it also slightly reduces the stay in oven, which must already be in temperature at the time to stick the roast.
For a perfect result, once you have baked the meat, cover with a piece of aluminum foil and let rest for 10 minutes, the fibers will relax and the juices will be distributed in the piece, making it soft.
