Ingredients for 4 people:
- 3 zucchini
- 3 cucumbers
- ½ lemon juice
- 4 tablespoons of extra virgin olive oil
- 6 mint leaves
- 1 sprig of mint to decorate
- 2 jars of natural yogurt
- salt
- black pepper
Preparazione:
Crush the mint with extra virgin olive oil, peel the cucumber and cut into rings, wash and check the zucchini and cut into thin rings also. Emulsified with lemon yogurt, salt and mint oil. Arrange the vegetables on a serving dish, season them with the yogurt sauce. Finish the dish sprinkle with freshly ground black pepper and a sprig of mint in the center.
