Sardines and anchovies thoroughly cleaned
To remove the heads from sardines and anchovies, instead of co grasp the fingers and bend them, is much more practical and faster to use scissors.
Once removed the heads will just put your thumb on the side of the cut, making progress towards the tail, so it will open the belly and you will do well to remove the entrails. The scissors are very useful for cutting the dorsal fins, even the biggest fish, which you can open the belly always with the same tool, so always keep a couple riservatene very sharp just to clean the fish.
