Ingredients for 4 people:

  • 12 salted anchovies
  • chopped parsley
  • 1 clove of garlic
  • dry white wine
  • white wine vinegar
  • salt
  • extra virgin olive oil
  • breadcrumbs



Clean the anchovies by removing the head and backbone of running water and making the final rinse with a mixture of water and vinegar.

Dry them well with a paper towel and dip them in a bowl with extra virgin olive oil.

Soak a bit of bread in vinegar and squeeze.

Put on a platter ‘anchovies taken from the bowl, 1 clove of garlic, a little’, and parsley, chopped after all, mix it with bread squeezed, adding salt and olive oil.

Drain the anchovies for good from the bowl, lay them on a platter and serve with parsley sauce.
