Bucatini with ragout of cod

Ingredients for 4 people:

  • 320 grams of pasta like bucatini
  • ½ kg of cod
  • ½ kg of ripe tomatoes
  • 4 tablespoons of extra virgin olive oil
  • 1 white onion
  • 1 red pepper
  • 1 tablespoon chopped parsley

Preparazione:

Wash the cod removing any bones and skin, cut into chunks.

Cross Slit the tomatoes on top cover and boil for one minute in boiling water, let cool in cold water, peel, remove seeds and cut into small pieces.

In a frying pan with a drizzle of extra virgin olive oil before you soften an onion peeled and chopped, add the chunks of salt cod and brown for about 10 minutes, then remove the cod and set aside, in the same pan add the tomatoes , chili and cook until the sauce. At this point add salt cod again and finish cooking for another 5 minutes.

In the meantime boil the bucatini for the time indicated on the pack in plenty of boiling salted water, drain and toss in pan with the tomato sauce and salt cod. Jump up to season them, cut them into 4 individual plates and sprinkle with chopped parsley.
