Ingredients for 4 people:
- 800 grams of turkey breast
- 200 grams of apricots
- 3 tablespoons extra virgin olive oil
Ingredients for the sweet and sour sauce:
- 1 glass of apricot juice
- 2 teaspoons ketchup
- 3 tablespoons sugar
- 5 tablespoons of apple cider vinegar
- 1 teaspoon of apricot jam
Prepare the sweet and sour sauce by placing all ingredients in a saucepan, excluding the apricot jam and simmer for 10 minutes, stirring from time to time, turn off and add the jam, mix all the sauce and keep aside.
Meanwhile, cut the breast into cubes, wash the apricots, cut into strips and denocciolatele. In a pan heat the olive oil, saute the diced turkey, add the apricots, stir and continue cooking for another 5 minutes, add the sweet and sour sauce that you had kept aside, stir, cover with a lid and continue cooking for another 5 minutes on low heat. Serve hot accompanied by white rice Blasmati.
