Salmon and avocado tartare

Ingredients for 4 people:

  • 600 g fillet of fresh salmon
  • 1kg of salt
  • 500 grams of sugar cane
  • 1 lemon
  • 1 avocado
  • salt
  • extra virgin olive oil
  • 4 sprigs of thyme
  • cutting salad


Put in a bowl the brown sugar, salt and the zest of one lemon and mix thoroughly washed, cover with a piece of this compound a baking tray lined with paper, Lay the salmon on top and cover completely with remaining salt flavored, cover food with plastic wrap and let rest in refrigerator for at least 6 hours, after this time, remove the salmon with salt and rinse for a minute under cold running water, then dry well with paper towels and cut into pieces, assembling them in a bowl, add the avocado peeled, pitted and diced the same size as the salmon drizzled with extra virgin olive oil, mix well and let stand in refrigerator for at least 30 minutes. Wash the lettuce, pat dry and arrange on 4 serving plates, the center with the help of a coppapasta, lay the salmon and diced avocado. Complete with a sprig of thyme and finished with a decorative glaze of balsamic vinegar.
