- 350 g of flour 00
- 12 g of yeast
- ½ teaspoon of sugar
- 150 ml of carbonated water
- 100 ml of natural water
- 5 tablespoons extra virgin olive oil
- 1 and ½ teaspoon salt
Dissolve the yeast in a bowl with sugar and a glass of warm water, place the flour on a pastry and pour the water in the center with the yeast and start kneading, mixing the remaining water, salt and oil, continue to knead vigorously for a long time to mix all the ingredients and the dough is smooth and elastic with whom you will form a ball that let rise on floured work surface covered with a clean cloth for about an hour and a half.
At this point, spread out a generous layer of dough on a baking pan previously greased with a drizzle of extra virgin olive oil, shored up with your fingers the surface of the cake, brush with an ’emulsion of water and extra virgin olive oil and let stand again for 30 minutes
