Quique Manu

Ingredients for 4 people:

  • 4 medium onions white
  • 1 knob of butter
  • 1 tablespoon olive oil
  • 3 eggs
  • 300 g of cream
  • salt
  • black pepper


Peel onions, cut into thin slices, plunge in a pan with a knob of butter and a tablespoon of olive oil and brown, add a ladle of water and stir occasionally until the end of cooking, remove the pan from the heat and let it cool.

In a bowl with a whisk, beat 3 eggs with a pinch of salt and a sprinkling of freshly ground black pepper, add the cream, mix together, season with salt pepper.

After mixing for the mixture well, pour over cooked pasta brisée to white and bake at 200 degrees for 15 minutes.
