Bavarian almonds

Ingredients for 4 people:

  • ½ liter of milk
  • 100 grams of peeled almonds
  • 20 g of gelatin
  • 1 bag of vanilla
  • 100 grams of sugar
  • 2 tablespoons of coffee powder
  • 250 ml fresh cream



Bring milk to a boil, remove from heat, add the vanilla, the almonds into a powder, sugar and coffee. Mix well and let stand for 20 minutes. Then strain the milk through a cheesecloth, then squeeze it down to bring out the aroma content. Put the pot on the fire, and when the milk is hot, add the softened gelatin in water first and then squeezed, mix well and let cool completely, then add the cream you have installed. Pour the mixture into 4 individual ramekins and place them in the refrigerator for 2 hours. Just before serving, dip them briefly in boiling water to detach from the mold and better sformateli on serving plates.

If you love chocolate in a double boiler, melt 40 grams of dark chocolate, once melted, pour it on the bottom of the molds. Proceed as above.
