Orange pancakes

Ingredients for 4 people:

  • 1 orange
  • 2 tablespoons of sugar
  • 3 tablespoons Marsala
  • 50 g of flour
  • 1 egg
  • 1 pinch of salt
  • Oil for frying
  • icing sugar



Dilute the flour with some water, add a pinch of salt, egg yolk, sugar and half the Marsala and let it sit for an hour, then stir in the beaten egg whites. Wash the orange, peel, sprinkle with remaining sugar and moisten with the marsala. Dip the orange slices in batter and fry in hot vegetable oil. Drain with a slotted spoon, place them on paper towels, pat dry and sprinkle with powdered sugar and orange peel.
