Paccheri vegetable ragout

Ingredients for 4 people:

  • 400 grams of pasta type paccheri

  • 1 medium onion
  • 2 trumpets
  • 1 eggplant
  • 12 cherry tomatoes
  • 1 mozzarella
  • salt
  • ½ cup white wine
  • extra virgin olive oil
  • pepper to taste


Meanwhile, regular diced vegetables, and when the onion is golden, add the diced vegetables and cook, stirring, over high heat for 10 minutes. At this point, shaded with white wine and continue cooking for another 5 minutes and add the tomatoes, washed and cut into cubes and jump all for another 2 minutes, season with salt and pepper to taste.

Paccheri Cook in plenty of boiling salted water according to the time indicated on the package, drain and toss in sauce pan with the vegetables.

Serve paccheri dividing them into individual plates and 4, to taste, sprinkle with

mozzarella, cut into cubes.
