Chunks of beef with cherry tomatoes and eggplants

Ingredients for 4 people:

  • 800 grams of diced beef
  • 2 eggplants
  • 20 cherry tomatoes
  • 2 shallots
  • 2 carrots
  • 2 tablespoons of extra virgin olive oil
  • 1 glass of white wine
  • 1 cup vegetable broth
  • salt
  • black pepper



Peel the staircases and finely affettatateli, peeled, washed carrots and slice them.

Prepare a pan with extra virgin olive oil is hot, pour the bites and brown, stirring with a wooden spoon, add the shallots and carrots, cook, stirring, for 10 minutes and blended with white wine. Add salt and continue cooking for another 25 minutes, adding the stock in order to keep the meat moist. In the meantime wash the eggplant and tomatoes, diced the first and the second half, then add the vegetables to the meat. Continue cooking for another 20 minutes, until the vegetables are cooked as, but not defeat. When cooked, divide the bites on 4 plates and sprinkle with freshly ground black pepper.
