Ribbons of zucchini and shrimp

Ingredients for 4 people:

  • 12 shrimp
  • 3 zucchini
  • 250 g cherry tomatoes
  • 150 g of leek
  • 1 handful of capers
  • 4 tablespoons of extra virgin olive oil
  • 4 sprigs of thyme
  • salt
  • black pepper



Wash and check the zucchini, cut into thin lengthwise and blanch for 1 minute in a pot with salted water is already boiling. Clean the prawns, shell them, slit on the back to remove the black thread and brown in a frying pan with a little olive oil for about 3 minutes, add salt and when they are cooked, set aside. Clean the leeks, remove the outer leaves, cut into thin slices and brown in same pan in which you cooked the shrimp, add the cherry tomatoes cut in half, season with salt and pepper for about a minute and jump.

Arrange the zucchini slices on a work surface, lay on each a shrimp and crab wrap it around like a ribbon. Prepare 4 serving plates, dispose yourself leeks and tomatoes, add some capers, finished with ribbons of zucchini and shrimp. Season with a drizzle of extra virgin olive oil and decorated with sprigs of thyme.
