Prawns in crispy rice noodles with julienne of vegetables

Ingredients for 4 people:

  • 4 shrimp
  • 30 grams of rice noodles
  • 2 carrots
  • 2 zucchini
  • extra virgin olive oil
  • oil for frying
  • 1 egg
  • salt



Wash the vegetables, mondatele, cut into julienne strips and sauté in a pan with a little olive oil for 5 minutes so that they are crispy.

Blanched in boiling water rice noodles and immediately after pass them in cold water and drain.

Meanwhile clean the prawns, shell and free them of the gut, keeping only the tail end and pass them in the beaten egg with a pinch of salt.

Then wrap the shrimp in rice noodles and fry in a pan with plenty of corn seed oil, drain on paper towels and serve hot on julienne carrots and zucchini.
