Ingredients for 4 people:
- 350 g frozen peas
- 100 ml of milk
- 40 g of flour
- 2 eggs
- 40 g of grated parmesan cheese
- extra virgin olive oil
- black pepper
Boil peas in salted water for 5 minutes and drain.
Whisk 2 / 3 of peas with eggs, milk and flour, add the grated Parmesan, salt and pepper and finally stir in the rest of the peas have been set aside.
Heat a drizzle of extra virgin olive oil in a frying pan and pour the mixture by spoonfuls, in order to obtain small fritters. Cook for 2-3 minutes per side and serve hot.
